We have always been a fan of @kiwico_inc boxes, but one of our new favorites is their Yummy Box. Felix loves getting his in the mail each month! They create such a fun way to teach kids about cooking and baking. He recently made us a dish, that was even a first for me to eat…Bibimbap!
Bibimbap is a Korean dish, and translated in English means, “mixed rice.” I will say that this wasn’t the easiest dish to make, but it was so delicious. Felix even got out of his comfort zone and tried all the things. I mean it’s way cooler to try food you make yourself versus what your mom makes you, right? Ingredients: ⭐️ 1-1/2 Cups uncooked rice (rinsed) ⭐️ 1 lb. of ground beef ⭐️ Cucumber ⭐️ Shredded Carrots ⭐️ Eggs ⭐️ 3/8 cup- Soy Sauce ⭐️ 3 tablespoons- Sugar ⭐️ 3 tablespoons- Sesame Oil ⭐️ 2 teaspoons- Garlic Powder ⭐️ 1 teaspoon- Salt ⭐️ 1/2 cup- White Vinegar ⭐️ 1 cup-Water ⭐️ Extra toppings we added: Grilled Zucchini and Mushrooms, Green Onions and Red Cabbage. Directions: ⭐️ Cook your rice, and keep warm. ⭐️ Mix your beef with a marinade- 2 tablespoons each of sesame oil, soy sauce, sugar and 1 teaspoon garlic powder. Let sit for 30 minutes. ⭐️ Cut your cucumber into thin slices. ⭐️ Next, make your marinade for the cucumber with 1/2 cup vinegar, 1 teaspoon of sugar and 1 teaspoon of salt. Add cucumbers and let sit. ⭐️ Use sesame Oil and place in pan on medium heat on the stovetop. Add 2 cups of shredded carrots and cook in the pan for 5 minutes. Place in a small bowl. ⭐️ Cook zucchini and mushrooms together as you did the carrots. ⭐️ Cook your beef. ⭐️ Cook your eggs to desired consistency. ⭐️ Make the sauce for the bibimpap. This consists of 1/4 cup soy sauce, 1 teaspoon sesame oil, 1 teaspoon garlic powder, 2 teaspoons sugar and 1 tablespoon Gochujang ⭐️ You are finally ready to build your bowls! To a bowl add a scoop of rice. Next, place your vegetable toppings and beef around the rice. Place an egg on the top. ⭐️ Lastly, top your bowl with your sauce and some green onion! ⭐️ Enjoy!
